Most people do not think much about where their honey comes from. It appears on a grocery store shelf in a plastic bear or a generic jar, labeled with something vague like “pure honey” or “naturally sweet,” and that is usually the end of the story. The origin, the bees, the season — all of it is invisible by the time the honey reaches your kitchen.
We think that story is worth telling. Here is where our honey actually comes from — and what it takes to get it from a hive in Ohio to a jar on your counter.
It Starts With the Bees
Davis Apiaries operates several hundred hives across Ohio. Each hive is a living colony — a single queen, tens of thousands of worker bees, and a comb structure that the colony builds, maintains, and fills with honey across the warm months of the year.
Managing hives at that scale is not passive work. The bees do the foraging and the honey-making, but keeping colonies healthy, productive, and problem-free requires consistent attention from the people managing them. Nate spends a significant portion of the year working through hives — inspecting frames, monitoring for disease and pests, managing the colony’s population, and making decisions that affect whether a hive thrives or struggles.
What looks like a simple jar of honey on the outside represents a season’s worth of that work.
What Happens in May
By the time May arrives, the bees are coming into their most active period of the year. Temperatures are consistent, flowers are blooming across Ohio, and colonies that have been building their populations through early spring are ready to work.
May is when we finish requeening — the process of replacing older queens with new ones to keep colonies strong and productive. A healthy, laying queen is the foundation of a productive hive. Without one, a colony will decline regardless of how good the forage is around it. Requeening is time-consuming work done hive by hive, but it is one of the most important investments we make in the quality of what comes later.
The beginning of May is also when the honey supers go on. A honey super is the upper section of the hive where bees store surplus honey — honey beyond what the colony needs to feed itself. Adding supers at the right time gives the bees the space they need to store the honey they are about to collect in earnest as summer arrives. Too early and they sit empty. Too late and the bees run out of room, which creates its own set of problems (SWARMS!).

Where the Honey Comes From
Ohio is good honey country. The combination of agricultural land, natural meadows, and seasonal wildflower blooms gives bees a varied and reliable forage base across the warm months. Our honey is a blend of what is available — wildflower, clover, and soybean blooms all contribute depending on the season and the location of the hives.
This is what “local honey” actually means in practice. The bees range several miles from their hives and collect nectar from whatever is in bloom within that radius. The resulting honey reflects the landscape around it — the specific mix of plants, the local weather patterns that affect bloom timing, the particular character of a given season. No two years produce identical honey, which is part of what makes it interesting.
Large commercial honey, by contrast, is typically blended from sources across multiple countries, heated and filtered to produce a uniform product that looks and tastes the same every time. Consistency is the goal. Local character is precisely what gets removed in the process.
From May Bloom to August Harvest
The bees that start collecting nectar in May are building toward a harvest that happens in August. That three-month window — late spring through midsummer — is when the bulk of honey production happens. The bees collect nectar, process it inside the hive, and fan it with their wings to reduce the moisture content until it reaches the thick, stable consistency we recognize as honey. Then they cap each cell with beeswax to seal it.
August is when we pull the supers and extract the honey. The timing matters — too early and the honey may not be fully cured, too late and the season starts to wind down. The extraction process involves removing the wax caps from each frame and spinning the frames in an extractor to pull the honey out without destroying the comb. The honey is then lightly filtered to remove wax and debris and prepared for bottling.
From nectar in a flower in May to honey in a jar in late summer is a process that involves millions of bees, months of careful management, and more steps than most people realize when they reach for a jar on a shelf.
Why This Matters
There is a practical reason to care about where your honey comes from beyond the story of it. Honey that is produced locally, harvested at the right time, and minimally processed retains the natural character that makes raw honey worth eating — the enzymes, the pollen, the flavor complexity that reflects the specific landscape it came from. That is what gets lost when honey is sourced from wherever is cheapest, blended for uniformity, and processed for shelf stability.
